Quick pitta pizzas Serves 4 5 Mins Ingredients
4 wholemeal pitta breads 4g tomato purée 1 handful sliced mushrooms (cup or button) 4 tomatoes, thinly sliced 125g sliced light mozzarella cheese 2 tsp dried mixed herbs 1 pinch ground black pepper Method
1. Preheat the oven to 190°C, fan 170°C, gas mark 5. Place the pitta breads on a baking sheet. 2. Spread 1 tsp of tomato purée on each pitta, then top with the mushrooms, sliced tomatoes and cheese. 3. Sprinkle with the mixed herbs and season with black pepper. 4. Bake for 10-12 minutes, or until the cheese is melted and bubbling. Serve with salad. Tips
1. Add a few olives, slices of red or green pepper and some chopped red onion for a bit of extra flavour. 2. If you prefer, grill the pittas under a medium-hot grill for 6-8 minutes instead of baking them. Nutritional information
