Ingredients: For the base:
2 Tsp Oregano 1 Cauliflower Head (approx 300g) 1 Egg, large 1 Tsp Mixed Herbs Pinch of Salt and Pepper For the tomato Sauce:
400g Tin of Chopped Tomatoes 1 Garlic Clove 1 Tsp Oregano For the toppings: 40g Mature Cheddar 1 Green Pepper, sliced 1 Red Onion, sliced Pinch of Parsley, chopped Method:
Preheat your oven to 190C and blend the cauliflower head. Transfer to a heatproof bowl and microwave for 4 minutes. Allow to cool until you are able to touch the cauliflower without burning yourself. Transfer to a clean tea towel and squeeze tightly until all the excess water is drained (you need it to be as dry as possible). Put the cauliflower into a mixing bowl and mix all of the base ingredients together. Spread onto a baking tray lined with baking paper and using a spoon, press into a rough pizza shape. Bake the base for 10 minutes or until golden brown. Add the sauce alongside the toppings and bake for a further 5 minutes until the cheese is melted! Enjoy!

I plan to Mark, it was a recipe from diabetes.co.uk low carb programme. I thought I had ordered some cauliflower with my shopping yesterday, but obviously had a senior moment as it never arrived, and no mention of it on the receipt

Well, Mark, I tried this yesterday and I was pleasantly surprised. Once the tomato sauce (I used sun-dried sun paste instead of canned chopped tomatoes) and cheese etc are added it's pretty tasty, and we all (apart from Lily) enjoyed it. I'd definitely do it again. I suspect you'd be able to add any topping...
