A Caprese Salad is one of my favorite light summer "mini" meals. Its design is to resemble the colors of the Italian flag: red, white, and green. In Italy, it is usually served as an antipasto or 'starter dish'.
Try it, you'll like it!
Provides 4-6 servings Ingredients:
- 3 vine-ripened tomatoes, 1/4-inch thick slices
- 1 pound fresh mozzarella, 1/4-inch thick slices
- 20 to 30 leaves (about 1 bunch) fresh basil (I pull mine directly off of the plant*)
- Extra-virgin olive oil, for drizzling
- Coarse salt and pepper
Directions: - Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter.
- Drizzle the salad with extra-virgin olive oil
- Season with salt and pepper to taste.
*Hint - Pinch the basil leaves at the top of the stem. We don't want to feed stems to our guests, do we?
